Synthesis and Characterization of 4-Ethyl-2-Methoxyphenol

in this work including 4-ethyl-2-methoxyphenol (98.0%), phenol (99.5%),
Ca(OH)2 (99.0%), NaOH (99.0%), KBr (spectrographic pure),
DMSO-d6 (99.9%, with 0.03% TMS), and CDCl3 (99.9%) were purchased from Aladdin Industrial Co. (Shanghai,
China). 4-ethyl-2-methoxyphenol with analytical standard (≥98.0%)
was purchased from Sigma-Aldrich Co. (St. Louis). Among these, KBr
was used for infrared spectrum measurement, while CDCl3 and DMSO-d6 were used for nuclear magnetic
resonance (NMR) characterization.

Sensory Profiling of Pasteurized and UHT Milk

The top 10 sales of pasteurized milk and UHT milk products in China were obtained through Nielsen data. This test selected 6 commercial milk samples, including 3 types of UHT milk numbered A1~A3, and 3 types of pasteurized milk numbered B1~B3. The 6 types of milk had similar protein and fat contents, and the detailed information was shown in Table S1. The samples were purchased from Yonghui Supermarket in Beijing. UHT milk within 30 d of production and pasteurized milk within 2 d of production were selected. The former was placed at room temperature and the latter was placed at 4°C. All samples were tested within 24 h after purchase. The reason for only sensing 6 types of milk was that the results of the pre-experiment showed that consumers' patience and conscientiousness decreased significantly when there were more than 6 samples.
The chemicals, including, ethyl hexanoate, (E)-2-octenal, 3-methyl-1-pentanol, benzaldehyde, phenol, 4-ethyl-2-methoxy-phenol, 1-octen-3-ol, 2-methyl-3-heptanone, γ-nonanolactone, δ-hexalactone, δ-decanolactone, γ-Dodecanolactone, and n-alkanes (C 5 -C 25 ), were all provided by Sigma-Aldrich Chemical Co. (St. Louis, Missouri, USA). Purity of the standard > 99%.
