Monosaccharide standards (mannose, ribose, rhamnose, glucuronic acid, galacturonic acid, N-acetyl-D-glucosamine, N-acetyl-D- galactosamine, glucose, galactose, xylose, arabinose, and fucose) were purchased from Shanghai Yuanye Bio-Technology Co., Ltd. (Shanghai, China). All the reagents and chemicals used in this study were analytical or HPLC grade.

Soybean Protein and Wheat Gluten Characterization

Soybean protein concentrate (SPC) was purchased from Hao Xiang (Guangzhou, China), wheat gluten (WG) was purchased from Wanbang (Henan, China). SPC contains approximately 75.3 % protein, 8.5 % moisture, 4.4 % ash, 14.9 % carbohydrate, and 2.4 % fat. WG contains around 81.3 % protein, 3.7 % moisture, 2.1 % ash, 12.2 % carbohydrate, and 1.1 % fat. Neutrase (8 × 105 U/g) from Bacillus amyloliquefaciens was kindly provided by Novozymes (Bagsvaerd, Denmark). Fresh chicken breasts were purchased from a local supermarket in Harbin, China, and stored at 4 °C before use. 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) were both purchased from Solarbio (Beijing, China). Throughout the study, deionized (DI) water was used.
