acid methyl ester, phytol, phenylacetaldehyde, α-terpineol,
2-phenylethanol, 1-octen-3-ol, δ-cadinene, caryophyllene oxide,
neral, methyl salicylate, and linalool oxide were purchased from Yuanye
Bio-Technology Co. (Shanghai, China). The alkane standard (C6–C44) was purchased from AccuStandard (New Haven,
CT, USA).

Olfactory Response of W. magnifica to Volatile Compounds

Methylheptenone (Shanghai Yuanye Biotechnology Co., LTD, Shanghai, China), 1-octen-3-ol (Shanghai Yuanye Biotechnology Co., LTD, Shanghai, China) and propyl butyrate (Shanghai Maclin Biotechnology Co., LTD, Shanghai, China) were prepared into 10−2 µg/µL samples with n-hexane (Shanghai Maclin Biotechnology Co., LTD, Shanghai, China), respectively. The antennae of the W. magnifica were cut off under a microscope, and the two ends of the antennae were connected to the corresponding electrodes using a capillary tube. The 1-day-old and 7-day-old W. magnifica were selected for the experiment. Each sample was repeated three times for male and female, and each antenna was used once.
Gas Chromatography (GC) (Agilent) conditions: the initial temperature was 120 °C, kept for 1 min, and then increased to 280 °C at a rate of 20 °C/min, and kept for 15 min; 5:10 split injection, each injection of 1 µL.

Quantification of Aroma Compounds

For identification and quantitation of aroma compounds, the following authentic flavor standards were purchased from Macklin Biochemical Technology Co., Ltd., Shanghai, China: methyl valerate (99%), isovaleraldehyde (98%), furfuryl mercaptan (98%), heptanal (97%), hexanal (99%) and 2-butylfuran (98%). Benzyl alcohol (AR, 99%), 1-octen-3-one (98%), 1-octen-3-ol (98%), methyl palmitate (AR, 97%) and benzoic acid (99%) were purchased from Yuanye Bio-Technology Co., Ltd., Shanghai, China. Phenylacetaldehyde (95%) and benzaldehyde (AR, ≥98.5%) were obtained from Sinopharm Chemical Reagent Co., Ltd., Beijing, China. The internal standard, 1-decanol (GC, ≥99.5%), was purchased from Aladdin Biochemical Technology Co., Ltd., Shanghai, China.

Silver Carp Butchery and Compound Analysis

Fresh silver carp were obtained from a local aquatic products market (Wuhan, Hubei, China), and transported to the lab alive in an aquarium by truck within 20 min. Oxygen was supplied continuously during transportation and pre-slaughter. The silver carp were instantly stunned by a blow to the head, followed by beheading, scaling, eviscerating, filleting and washing. These procedures were carried out in accordance with research protocols approved by the Institutional Animal Care and Use Committee of Huazhong Agricultural University (Wuhan, China). Standard compounds used in this study were chromatographic grade: hexanal (≥99 %) provided by Aladdin Co., ltd (Shanghai, China); 1-octen-3-ol (>98 %) and nonanal (>95 %) from Shanghai Yuanye Biotechnology Co., ltd (Shanghai, China); and methanol (≥99.8 %) supplied by Sinopharm Chemical Reagent Co., ltd (Shanghai, China). Other required chemicals were of analytical grade and provided by Sinopharm Chemical Reagent Co., ltd.
