In vitro lipid digestibility was assessed in triplicate as reported by Capuano, Pellegrini, Ntone, and Nikiforidis (2018) , but using a pH of 7.7 and a reaction time of 20 min.
Lipid digestibility was calculated as the quantity of released fatty acids (expressed in oleic acid equivalents) over the total lipids (g/100 g lipids), taking into account the corrections calculated by analysing samples both without enzyme addition and defatted.
Extra virgin olive oil (Gaia, S. Rocco al Porto, LO, Italy) was digested following the described procedure as a reference fat.
