Pure standards of aroma compounds, namely, polyvinylpolypyrrolidone (PVPP) and 4-methyl-2-pentanol Methanol, were purchased from Sigma-Aldrich (St. Louis, MO, USA). β-d-glucolactone and n-octyl-β-d-glucopyranoside were purchased from Sangon Biotech (Shanghai, China). Rapidase® AR2000 commercial preparation with glycosidase side activities was purchased from DSM Oenology (Delft, The Netherlands). Methanol, dichloromethane, citric acid, and sodium phosphate dibasic dodecahydrate (analytical grade) were purchased from Beijing Chemical Works (Beijing, China). LC-MS grade acetonitrile, formic acid, and Methanol were purchased from Honeywell (Morristown, NJ, USA).

HPLC grade methanol used for extraction of polyphenols and molecular biology grade dimethyl sulfoxide (DMSO) used to dissolve the crude extract were obtained from FUJI FILM Wako Pure Chemical Co. LTD. (Osaka, Japan). LC-MS grade acetonitrile and HPLC grade Formic acid were obtained from Honeywell International Inc. (Charlotte, NC, USA). All commercially available chemicals for crude extract solution were dissolved in DMSO and stored at −40 °C until used. Standard procyanidin B2 was obtained from Extrasynthese (Genay, France). Folin-Ciocalteu reagent was obtained from Merck KGaA (Darmstadt, Germany). DPPH (11-diphenyl-2-picrylhydrazyl) radical was obtained from Tokyo Chemical-Industry, Co., Ltd., Tokyo, Japan). Potassium persulfate and 2,2’-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS) used to generate ABTS radical were obtained from Tokyo Chemical-Industry, Co., Ltd., (Tokyo, Japan), and FUJI FILM Wako Pure Chemical Co. Ltd., (Osaka, Japan), respectively. All other reagents and chemicals were special grade reagents, unless otherwise stated.

Methanol was purchased from VWR (Radnor, PA, USA), and pentane was obtained from Fluka Analytical (Honeywell International Inc., Charlotte, NC, USA). Hexane and sodium methoxide solution 25 wt.% were purchased from Sigma Aldrich (St. Louise, MO, USA). Sodium sulfate was purchased from Titolchimica (Rovigo, Italy, IT) and the CPFA cis-9,10-methylene-octadecanoic acid (dihydrosterculic acid DHSA, as methyl ester, purity ≥98%) was obtained from Chem Cruz (TE Huissen, The Netherlands, NL). LC-MS grade formic acid and LC-MS grade ammonium formate were purchased from Sigma Aldrich (Steinheim, Germany). LC-MS grade Methanol and LC-MS grade acetonitrile were purchased from Honeywell (Selze, Germany), and LC-MS grade 2-propanol and methyl tert-butyl ether (MTBE) were purchased from Merck KGaA (Darmstadt, Germany) and not purified further. If not otherwise stated, Milli-Q water was employed.

Formic acid (FA) was purchased from Merck (Darmstadt, Germany). Ammonium bicarbonate (ABC) was acquired from Acros Organics (Pittsburgh, PA, USA). Trifluoroacetic acid (TFA) was obtained from Sigma-Aldrich (St Louis, MI, USA). LC-MS grade acetonitrile (ACN) was purchased from Honeywell (Morris Plains, NJ, USA). Sequencing grade trypsin was obtained from Promega (Fitchburg, WI, USA).
