lactate, sodium borohydride, and silver nitrate were purchased from
Aldrich and were used as received. Potassium iodide, sodium chloride,
sodium fluoride, potassium bromide, potassium chloride, aluminum oxide,
sodium nitrate, potassium cyanide, sodium nitrite, hydrochloric acid,
sodium hydroxide, sodium sulfate, sodium thiosulfate, sodium acetate,
sodium carbonate, potassium thiocyanate, monosodium phosphate, and
disodium phosphate were purchased from Aldrich and used as received
without further purification. Magnesium acetate, iron(III) chloride,
iron(II) chloride, zinc sulfate, nickel sulfate, magnesium sulfate,
and copper nitrate were purchased from Fisher and used as received
without further purification. Dialysis tubes with a 29.3 mm diameter
and 3.5 kDa molecular weight cutoff (MWCO) were obtained from Fisher
Scientific. A phosphate buffer solution (pH 3.0 to pH 13) was prepared
with monosodium phosphate and disodium phosphate (0.2 M), further
adjusted with sodium hydroxide and hydrochloric acid. All glassware
was thoroughly washed with (3:1 ratio of HCl/HNO3) aqua
regia and was then rinsed with ultrapure water prior to use. Ultrapure
water was used in all of the experiments.

Whey Protein Isolate and Inulin Characterization

Whey protein isolate (WPI) was purchased from Fonterra Co-operative Group (Auckland, Netherlands). The percentage of protein is 92.3% based on dry weight. The whey proteins are composed of 69.2% β-lactoglobulin (β-LG), 14.2% α-lactalbumin (α-LA), 3.3% bovine serum albumin (BSA), and 2.1% immunoglobulin G (IgG). SDS-PAGE gel preparation kit, SDS-PAGE sample loading buffer (5×), and coomassie blue fast staining solution were purchased from Beyotime Institute of Biotechnology (Nanjing, China). 1,2-Phthalic dicarboxaldehyde (OPA) was purchased from Solarbio (Beijing, China).

Characterization of Humic Acid Interactions

Nalidixic acid (NA), Niflumic acid (NFA), ferric nitrate nonahydrate (Fe(NO3)3•9H2O), sodium chloride (NaCl), sodium hydroxide (NaOH), hydrochloric acid (HCl) and potassium bromide (KBr) were provided by Sigma Aldrich and were of analytical grade or better, and used without further purification. All solutions were prepared with ultrapure water. Leonardite Humic Acid Standard (1S104H) was purchased from the International Humic Substance Society. A LHA stock solution (2 g/L, 1276 mg C/L) was prepared by dissolving 2 g LHA in 100 mL of 1 M NaOH, then diluted to 1 L with ultrapure water. Fontainebleau quartz sand (150-300 μm) was purchased from VWR Prolabo (France). Ultrapure water was used in all experiments.

Curcumin Nanoparticle Antimicrobial Efficacy

Curcumin (from Curcuma longa (Turmeric), ≥65%; Sigma-Aldrich), polyvinylpyrrolidone (PVP, average mol wt 40,000; Sigma-Aldrich), Tween 80 (Dinâmica), and absolute ethanol (P.A.; Dinâmica) were used to obtain the curcumin nanoparticles by solid dispersion. Methanol, dimethyl sulfoxide (DMSO), petroleum ether, and absolute ethanol (P.A.; Dinâmica), potassium bromide (spectroscopy grade; Sigma-Aldrich) were used in the nanoparticle analysis. Concentrated pasteurized orange juice was obtained from the company Louis Dreyfus (LDC, Paranavaí-PR, Brazil).
