Immobilized Lipase-Catalyzed Transesterification

The MCT and LCT were purchased from Youchuang Industrial Co., Ltd. (Shanghai, China) and local supermarkets (Wuxi, China), respectively. Lipase NS 40086 (immobilized lipase from Rhizomucor miehei, 275 IUN/g, particle form) was obtained from Novozymes (Beijing, China). The IUN is equal to the trans-esterification unit and defined as the amount of enzyme activity generating 1 μmol of propyl laurate per minute under defined standard conditions. The mixed fatty acid methyl esters standard and lipase from porcine pancreatic (type Ⅱ) were acquired from Sigma-Aldrich Chemical Co., Ltd. (Shanghai, China). HPLC-grade solvents, including hexane, isopropanol acetonitrile, and methanol were purchased from J&K Scientific Co., Ltd. (Beijing, China). Other analytical reagents were supplied by Sinopharm Chemical Reagent Co., Ltd. (Shanghai, China).

The essential oils of cinnamon, thyme, clove, lavender, and peppermint were obtained from the local aromatic plant laboratory (Hanzhong, Shaanxi, China). Menhaden fish oil was purchased from Blackmores Ltd. (Sydney, Australia). Tween 20, cinnamaldehyde, eugenol, thymol, linalool, and menthol were obtained from ANPEL Laboratory Technologies Inc. (Shanghai, China). The 2,2-diphenyl-l-picrylhydrazyl (DPPH) methyl ester, Eicosapentaenoic acid (EPA) methyl ester, docosahexaenoic acid (DHA) methyl ester, 2′,7′-dichlorofluorescein diacetate (DCFH-DA), 2,2′-azobis (2-amidinopropane) dihydrochloride (AAPH), Trolox, hexane, methanol, and anhydrous ethanol were obtained from J&K Scientific Ltd. (Beijing, China). All other common analytical reagents used in the study were purchased from Sinopharm Chemical Reagents Co., Ltd. (Shanghai, China).

Synthesis and Analysis of Baijiu Flavors

GO (98.0%) with a thickness of 0.7 ∼ 1.2 nm and sodium chloride (99.5%) were purchased from Yuanye Biological Reagent Co., Ltd. (Shanghai, China). Acrylamide (AM, 99.0%), ammonium persulfate (APS, 98.0%), N, N’-methylene bisAcrylamide (MBA, 98.0%), sodium hydroxide (NaOH, ≥ 96.0%), HPLC-grade dichloromethane (CH2Cl2, 99.9%), acetone (99.7%), ethyl acetate (99.9%), tetrachloromethane (CCl4, 99.5%), hexane (99.7%), and HCl solution (36.0%∼38.0%) were obtained from J&K Scientific Ltd. (Beijing, China). FeCl3·6H2O (99.5%), FeCl2·4H2O (99.95%), and ammonium solution (≥25.0% in H2O) were purchased from Aladdin Reagents Co., Ltd. (Shanghai, China). Ultrapure water was prepared through a Milli-Q system at 18.2 MΩ (Millipore, Bedford, MA).
The standards of ethyl pentanoate, ethyl hexanoate, propyl hexanoate, butyl hexanoate, ethyl octanoate, and hexyl hexanoate, with purities over 99%, were purchased from J&K Scientific Co., Ltd. (Beijing, China). 2H5-Ethyl pentanoate (IS1, ≥ 95%) and 2H5-propyl hexanoate (IS2, ≥ 95%) were used as isotope internal standards and obtained from Yuanye Biological Reagent Co., Ltd. (Shanghai, China). The stock standard solutions of each compound were prepared in ethanol and stored at 4 °C until analysis. A freshly prepared ethanol–water solution at 15% alcohol by volume (ABV) was used as a synthetic model of Baijiu.

Synthesis of Neodymium(III) Trifluoromethanesulfonate

Tris(2-ethylhexyl)phosphate (TOP, 98%), tributylphosphate (TBP, 98%) and 2,6-di-tert-butyl-p-cresol (Antiager 264, CP) were purchased from Aladdin Bio-Chem Technology, China. 1,3-butadiene (Bd, 1.9 M in hexane) was obtained from Energy, China. Cyclohexane was distilled with calcium hydride and stored with 4 Å molecular sieve for one week before use. Methanol (AR) was used as received.

Extraction and Analysis of Organic Compounds

Standard solutions of the target compounds were purchased from Dr. Ehrenstorfer GmbH (Augsburg, Germany). The internal standard solutions (Naphthalene-d8, Phenanthrene-d10
and Chrysene-d12) and surrogate recovery standard solutions (2-Fluorobiphenyl, Pyrene-d10) for GC-MS analysis were purchased from o2si smart solutions (Charleston, SC, USA). Silica gel and neutral aluminum oxide (for column chromatography, 100 -200 mesh) were obtained from Sinopharm Chemical Reagent Co., Ltd., China. All organic solvents used (hexane, acetone and dichloro-methane; ACS/HPLC certified) were obtained from J&K Scientific, USA. Silica gel and neutral aluminum oxide, as well as all glassware, were heated at 450℃ for 6 h prior to use to remove the possible organic residues. The Silica gel and neutral aluminum oxide were further activated at 130℃ for 13 h, reactivated with Milli-Q water (3%, w/w) for 2 h and were then soaked in hexane for 12 h before packing in the chromatographic column.
