The standards were purchased from Sigma-Aldrich (Milan, Italy), except for the quercetin 3-O-glucoside which was supplied by Analytik GmbH (Rülzheim, Germany). Coumaric and ferulic acids were used as standards for coutaric and fertaric acids due to the lack of reference materials.
Data were expressed as mg of phenols/kg of the UGs or food models.
