(HCl) and glacial acetic acid were obtained from Acros (Geel, Belgium).
Milli-Q water (18.2 MΩcm) was produced by a Sartorius Arium
611UV Ultrapure Water System (Göttingen, Germany). The titanium
devices were purchased from Materialise (Leuven, Belgium), while the
capillary (0.53 mm ID, 0.70 mm OD) was purchased from CMScientific
(Silsden, UK).

Starch and Sugar Hydrolysis Study

Melojel® dent corn starch (dent corn), Amioca waxy corn starch (waxy corn), PenPure® 10 potato starch (potato), Hylon® VII high amylose (≈70% amylose) corn starch (HACS70), and Hylon® V high amylose (≈55% amylose) corn starch (HACS55) were donated by Ingredion Inc. (Westchester, IL, USA), and Aytex® P wheat starch was donated by ADM (Minneapolis, MN, USA) (Table 1). All starches were unmodified and used “as is”. Eleven different sugars and sugar alcohols that are commonly used as food ingredients and/or have minor stereochemical differences of interest for this study were used: glucose, galactose, fructose, and mannose from Acros Organics (Fair Lawn, NJ, USA); trehalose dihydrate from Hayashibara Company (Okayama, Japan); maltose monohydrate from Fisher Bioreagents (Fair Lawn, NJ, USA); isomaltulose monohydrate and isomalt from BENEO-Palatinit Gmbh (Mannheim, Germany); sucrose from Mallinckrodt Chemicals (Phillipsburg, NJ, USA); and maltitol and sorbitol from Alfa Aesar (Ward Hill, MA, USA) (Table 1). Sodium hydroxide (NaOH) was from Sigma-Aldrich (St. Louis, MO, USA), and hydrochloric acid (37%) (HCl) was from Acros Organics. The water used in this study was processed using reverse osmosis, then filtered by a Barnstead E-Pure Lab Water System (Dubuque, IA, USA) to >17.4 milliohm-cm.

Hydrochloric acid 37% (HCl) was obtained from Acros (Geel, Belgium).
High-purity (HP) water (18.2 MΩ·cm) was produced by a Sartorius
(Göttingen, Germany) Arium 611UV Ultrapure-Water System. The
capillary (0.20 mm ID, 0.36 mm OD) was purchased from CMScientific
(Silsden, UK), and glass-lined tubing (300 mm length × 0.80 mm
ID) was from VICI (Houston, TX).

Hyaluronic acid-based biomaterials synthesis

Calcein AM, propidium iodide, minimum essential medium (MEM) without phenol red, Dulbecco’s modified Eagle medium (DMEM), high glucose Glutamax and fetal bovine serum (FBS) were purchased from Fisher Scientific. RGDSC, 5FAM-RGDSC, GCGYRGDSPG and 5FAM-GCGYRGDSPG peptides were purchased from Innovagen AB. Glass coverslips and absolute ethanol were purchased from VWR. Plus One Repel-Silane ES was purchased from GE Healthcare Life Sciences.

Analytical standards N-ε-carboxyethyllysine (CEL) and N-ε-carboxyethyllysine-d4 (CEL-d4), N-ε-carboxymethyllysine (CML), N-ε-carboxymethyllysine-d4 (CML-d4), methylglyoxal hydroimidazolone trifluoroacetic acid salt (MG-H1), methylglyoxal-hydroimidazolone-d3 (MG-H1-d3) and furosine were purchased from Iris Biotech GmbH (Marktredwitz, Germany).
