All solvents used for analysis were of high performance liquid chromatography (HPLC) grade and those used for the extraction were reagent grade, procured from Merck life sciences Private Limited, Bengaluru, India. MilliQ plus (Millipore India Private Limited, Bengaluru, India) purified water was used for the experiments. The analytical standards of CAAS (CAS no: 5743-28-2 Sigma-Aldrich, Bangalore, India) and ascorbic acid (CAS no: 50-81-7) were procured from Sigma Aldrich, Bangalore, India. Food-grade calcium ascorbate 98% suitable for human supplementation (DSM Nutritional Products Limited, Heanor, UK) and the surface-modified liposomal particles of CAAS with fenugreek galactomannan (FC+) was received from Akay Natural Ingredients, Cochin, India along with a detailed certificate of analysis indicating food safety parameters. ascorbic acid content was estimated using a HPLC (Shimadzu SPD20AT) coupled with SPD-M20A prominence photodiode array detector (PDA) (Shimadzu India Private Limited, Mumbai, India) and a Phenomenex reverse phase C18 column (150 × 4.6 mm; 3 μm, 100 Å) following a previously reported validated procedure by Robitaille and Hoffer.28 (link)

High-performance liquid chromatography (HPLC) analysis of ascorbic acid and individual phenolic compounds was carried out using a Shimadzu LC-10AT system equipped with a UV detector (Shimadzu Scientific Instruments Inc., Kyoto, Japan). The mass spectrometer (Agilent 1100 SL, Santa Clara, CA, USA) was equipped with dual electrospray ionization (ESI) source. The freeze-dryer FDU-2110 was purchased from Tokyo Physicochemical Equipment Co., Ltd. (EYELA) in Tokyo, Japan.
