(E)-2-nonenal, 2-nonanone, phenyl acetaldehyde, δ-decalactone, 2-methoxy-4-vinylphenol, 4,5-epoxy-(E)-2-decanal, (E,E)-2,4-decadienal, (Z)-2-nonenal, methional, and 4-hydroxy-2,5-dimethyl-3 (2H)-furanone were from Sigma–Aldrich (Taufkirchen, Germany). 1-Octen-3-one was from Symrise (Holzminden, Germany). The following labelled compounds were synthesized according to the literature cited; [2H2]-butanoic acid [19 (link)]; 3-[2H2]-methylbutanal [11 (link)]; [2H2-5]-2-acetyl-1-pyrroline [20 (link)]; [13C4]-2,3-butanedione [21 (link)]; [2H]-(E,E)-2,4-decadienal [22 ]; [13C2]-acetic acid [22 ]; [2H2]-3-methylbutanoic acid [23 (link)]; [2H3]-2-methoxyphenol [24 (link)]; [2H5]-phenyl acetaldehyde [25 (link)]; [13C2]-4-hydroxy-2,5-dimethyl-3(2H)-furanone [26 (link)]; [2H2]-δ-decalactone [27 (link)]; [2H2]-methional [27 (link)]. Preparation of Analytical Standards

The single-stranded DNA library B1_bank was synthesized by DNA Synthesis Ltd., Moscow, Russia. All primers for DNA amplification were ordered from the DNA Synthesis Ltd., Moscow, Russia. The B1_cap was either purchased from DNA Synthesis Ltd., Moscow, Russia or from Microsynth AG (Balgach, Switzerland). Candidate aptamer sequences were synthesized by Evrogen Ltd. (Moscow, Russia).

Comprehensive Soy Sauce Profiling

Ethyl acetate (99.9%), 4-ethyl-2-methoxyphenol (99.9%), and 3-methylbutanal (99.9%) were purchased from J&K Scientific (Beijing, China). C6–C28 n-alkanes standard mixtures (≥97%) were purchased from Sigma Aldrich (Steinheim, Germany). Purified water was purchased from Hangzhou Wahaha Co., Ltd., Hangzhou, China.

In the GC/O-AT and sensory evaluation sessions, nine food-grade volatile compounds, including phenylacetaldehyde (>99%), 3-hydroxy-2-methyl-4-pyrone (>96%), 2,5dimethyl-4-hydroxy-3(2H)-furanone (>98%), 3-(methylthio)propanal (>98%), 1octen-3-ol (>96%), 3-(methylthio)-1-propanol (>99%), dimethyl trisulfide (>95%), 2,5-dimethylpyrazine (>99%), and 5-ethyl-4-hydroxy-2-methyl-3(2H)-furanone (>98%), were purchased from Huabao Co. (China). Distilled water was obtained from Watsons Co. (Guangdong, China). Food-grade sodium chloride was purchased from Xiangheng Co. (Hunan, China).
