Olive Leaf and Broiler Chicken Fillet

Fresh olive leaves were collected from olive trees (Olea europaea L.) grown at the Faculty of Agriculture, Kagawa University, Japan. Breast fillet used in this study were obtained from 43-day old ROSS 308 broiler chickens which were given feed mixtures dedicated for broiler chickens and were stored at 4°C after slaughter. Sodium polyphosphate was obtained from Kirin Kyowa Foods Co. Ltd. (Tokyo, Japan). Thiobarbituric acid (TBA) malondialdehyde standard was purchased from Cayman Chemical(Michigan, USA). Folin-Ciocalteu reagent was purchased from Nacalai Tesque Inc (Kyoto, Japan). All other chemicals used were of analytical grade.

Antioxidant Evaluation and Characterization

(Osaka, Japan): 2,2′-azobis(2-amidinopropane) dihydrochloride (AAPH), acetonitrile, methanol, methyl tert-butyl ether (MTBE), methyl-β-cyclodextrin, β-carotene, trifluoroacetic acid (TFA), and pyrogallol. Fluorescein and Folin-Ciocalteu reagent were purchased from Nacalai Tesque, Inc. (Kyoto, Japan). Additionally, 6-hydroxy-2,5,7,8-tetramethylchromane-2-carboxylic acid (Trolox) was purchased from Sigma-Aldrich Co. (St. Louis, MO, USA), and β-cryptoxanthin was purchased from Funakoshi Co., Ltd. (Tokyo, Japan).

Gallic acid monohydrate, 2,2 -azobis (2-amidinopropane) dihydrochloride (AAPH) , 6-hydroxy-2,5,7,8-tetramethylchroman-2-carboxylic acid (trolox) , 2,2 -azinobis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS) , and phydroxybenzaldehyde were purchased from Wako Pure Chemical Industries (Osaka, Japan) . Folin-Ciocalteu reagent, sodium carbonate, and p-hydroxyacetophenone were purchased from Nacalai Tesque (Kyoto, Japan) . Fluorescein sodium salt and 1,1-diphenyl-2-picrylhydrazyl (DPPH) were purchased from Sigma-Aldrich (St. Louis, MO., U.S.A.) . p-Coumaric acid was purchased from Tokyo Chemical Industries (Tokyo, Japan) . Schaftoside and isoschaftoside were isolated from sugarcane products and identified based on NMR and UV-Vis spectra previously 8) . All other reagents were from Wako Pure Chemical Industries.
