Analytical Standards for Phenolic Compounds

Of these, 99.9% acetonitrile, 36.5–38% hydrochloric acid, >98% formic acid, cyanidin 3-O-galactoside chloride, cyanidin 3-O-arabinoside chloride, peonidin 3-O-galactoside chloride, and peonidin 3-O-arabinoside chloride were obtained from Sigma-Aldrich GmbH (Bethesda, MD, USA). Hyperoside, rutin, quercitrin, phloridzin, procyanidin B1, procyanidin B2, and chlorogenic acid standards were purchased from Extrasynthese (Genay, France), reynoutrin, (+)-catechin, and (−)-epicatechin were obtained from Sigma-Aldrich GmbH (Steinheim, Germany), and avicularin, procyanidin C1, and isoquercitrin were purchased from Chromadex (Santa Ana, CA, USA). Additionally, 96% ethanol was obtained from Stumbras AB (Kaunas, Lithuania), and 2,2-diphenyl-1-picrylhydrazyl (DPPH) was purchased from Vaseline-Fabrik Rhenania (Bonn, Germany). Purified deionized water used in the tests was prepared with the Milli-Q® (Millipore, Bedford, MA, USA) water purification system.

Phytochemical Analysis Protocol

The other chemicals were purchased from Sigma-Aldrich, Schnelldorf, Germany.

Polyphenol Isolation and Characterization

The following polyphenols were purchased from Sigma (St. Louis, MO, USA) [CG, ECG, EGC, (+)‐catechin, (−)‐epicatechin, quercetin, morin, 3‐hydroxyflavone, flavone, naringenin, taxifolin, ellagic acid, gallic acid, caffeic acid, chlorogenic acid, resveratrol, genistein, phloridzin, methylgallate, and piceid], Extrasynthese (Lyon, France) [quercetagetin, myricetin, rhamnetin, isorhamnetin, kaempferol, galangin, tamarixetin, luteolin, chrysin, sinensetin, 7‐hydroxyflavone, eriodictyol, isosakuranetin, (+)‐dihydrorobinetin, cyanidin, hyperoside, hirsutrin, quercitrin, rutin], or Apin‐Chemicals (Abingdon, UK) [3′,4′,7,8‐tetrahydroxyflavone].
Isolated single‐mass procyanidin fractions with various degrees of polymerisation (dp 2, dp 3, dp 4) were isolated from apples as previously described 16, 17. EGCG was isolated from green tea as previously described 15. Orobol was synthesised from phloroglucinol and 3,4‐dihydroxyphenylacetic acid using the general procedure of Goto et al. 18 previously used for synthesis of isoflavones.

Characterization and Modeling of Phytochemicals

Carbomer 980 was obtained from Lubrizol (Wickliffe, OH, USA). The reagents used in the antioxidant activity assay were 6-hydroxy-2,5,7,8-tetramethylchroman-2-carboxylic acid (Trolox), 2,2-diphenyl-1-picrylhydrazyl (DPPH) and sodium acetate, acquired from Scharlau (Barcelona, Spain). Iron (III) chloride hexahydrate (FeCl3 × 6H2O) was purchased from Vaseline-Fabrik Rhenania (Bonn, Germany) and 2,4,6-tri(2-pyridyl)-s-triazine (TPTZ) was obtained from Carl Roth (Karlsruhe, Germany).

Deionized water, produced by the Crystal E high-performance liquid chromatography (HPLC, Adrona SIA, Riga, Latvia) water purification system, was used.
