purchased from Macklin Biochemical Co. Ltd. Shanghai. All these chemicals
were used directly without any further purification. All aqueous solutions
were prepared in ultrapure water with a resistivity of 18.2 MΩ
cm–1 (Millipore Simplicity). The composition and
the pH range of MES, Britton–Robison (BR), and phosphate-buffered
saline (PBS) buffer solutions are listed in Table S1 in the SI.

Preparation of Biochemical Reagents

Synthesis and Antioxidant Evaluation of Triisobutyryl Gallic Acids

Phytol, 1-eicosanol, N,N-dicyclohexylarbodiimide (DCC), gallic acid, butylated hydroxy anisole (BHA), 2,6-di-tert-butyl-4-methylphenol (BHT), tert-butylhydroquinone (TBHQ), 2,2-diphenyl-1-picrylhydrazyl (DPPH), triethylamine, 4-dimethyaminopyridine (DMAP), hydrazinium hydrate solution (80%), glycerol trioleate, isobutyric anhydride, Tween-80, lecithin, 2,2′-azobis(2-methylpropionitrile) (AIBN), 2,2′-azobis-(2-methylpropionamidine), and dihydrochloride (AAPH) were purchased from Aladdin Reagent (Shanghai, China). Phytanol was obtained from Tokyo Chemical Industry. A thiobarbituric acid reactive substance kit was purchased from Suzhou Grace Biotechnology Co., LTD. All chemicals were of analytical grade.

Determination of Peroxidase Activity in Fishery Products

Hydrogen peroxide (H2O2, 30%), horseradish peroxidase (HRP, freeze-dried powder, >200 units/mg), N,N-diethyl-1,4-phenylenediammonium sulfate (DPD), L-tyrosine and L-phenylalanine were purchased from Aladdin (Shanghai, China). FeCl3 and Nafion (10% in water) were purchased from Sigma-Aldrich (Shanghai, China). Tetrakis(4-carboxyphenyl)porphyrin (H2TCPP) was purchased from TCI (Shanghai, China). Oxalic acid dehydrate was purchased from Mackin (Shanghai, China). ZrClO2·8H2O, benzoic acid, DMF, glucose, ascorbic acid, potassium dihydrogen phosphate, lithium carbonate, sodium phosphate monobasic dihydrate, sodium phosphate dibasic dodecahydrate, magnesium sulfate heptahydrate, and calcium chloride dehydrate were purchased from Sinopharm Chemical Reagent Co., Ltd. (Shanghai, China). All the experimental water comes from the Milli-Q reference system (Millipore, America) unless stated otherwise.
Fishery product samples were Todarodes pacificus belonging to the family Ommastrephidae; Larimichthys polyactis belonging to the family Sciaenidae; Pennahia argentata belonging to the family Sciaenidae. The above three kinds of fresh fishery products were purchased in a local market (Xincheng Market, No. 95 Jindao Road, Dinghai District, Zhoushan 316021, China) and brought into the laboratory no later than 1 h in ice.

Ultrapure water (>18.2 MΩ cm−1) is prepared by Millipore (Milford, MA, USA). ITO glass (square resistance < 17 Ω sq−1) is obtained from Kaivo Electronic Components Co., Ltd.
The electrochemical workstation (CHI 660E) is from Shanghai CH Instrument Co., Ltd. Transmission electron microscope (TEM, TecnaiG2 F20) is conducted with a TecnaiG2-F20 transmission electron microscope. Scanning electron microscope (SEM, SU8010) is performed with a Hitachi-SU8010 scanning electron microscope. Ultra-thin copper grid is obtained from Beijing Zhongke Building Electronic Technology Co., Ltd.

Silk Fibroin-based Hydrogel Synthesis
