Peroxyl radical scavenging activity of each sample was measured by the method of López-Alarcón and Lissi (2005). In brief, 100 mL of a 1% (w/v) hydrolysate sample was added to a solution of 15 mL of 600 mM 2,2'-azobis-(2-amidinopropane)dihydrochloride (AAPH) and 1 mL of 60 mM pyrogallol red (both from Sigma-Aldrich) in phosphate-buffered saline (PBS) buffer (pH 7.0) with 30% (v/v) ethanol. Then the mixture was incubated in a water bath at 37℃ for 2 h, and the absorbance was measured at 540 nm. The radical scavenging activity was calculated as follows:
