Nuclear magnetic resonance (NMR) spectra were recorded in dimethyl sulphoxide (DMSO)-d6 on a Bruker Avance 500 spectrometer operating at 500 MHz (1H) and 125 MHz (13C). Chemical shifts (δ, in ppm) were referenced to tetramethylsilane (TMS), and J was expressed in Hz. FAB-MS was taken on a Thermo Scientific TSQ 8000 Evo Triple Quadrupole mass (70eV) spectrometer (Thermo Fisher Scientific, USA). The UV-Vis spectrum was recorded in mEthanol on a Shimadzu UV-1800 spectrophotometer with silica gel column chromatography (Merck, 107734, Darmstadt, Germany). Ethanol, mEthanol, petroleum ether, ethyl acetate, and n-butanol were obtained from Panreac® (Barcelona, Spain). All chemicals were of analytical reagent grade. A quantity of 2,2-diphenyl-1-picrylhydrazyl (DPPH) in free radical form and acetylcholinesterase (AChE) was purchased from Sigma (Merck KGaA, Darmstadt, Germany).

Triterpenoid and Steroidal Saponin Quantification

Seeds of red quinoa (Chenopodium quinoa) as triterpenoid-like saponins, were purchased from Hijo de Macario Marcos (Salamanca, Spain). Fenugreek (Trigonella foenum-graecum), as steroidal-like saponins, were from Murciana de Herboristeria (Murcia, Spain).
Lipase from porcine pancreas (L3126), α-amylase from porcine pancreas (A3176), 4methylumbelliferyl oleate (4-MUO) (75164), starch from potato (S2004), lugol solution (62650), acarbose (PHR1253), Orlistat (PHR1445), Dulbecco's Phosphate Buffered Saline (PBS) (59300C), bile salts (B8756), phosphatidyl choline from egg yolk (61771), sodium chloride (746398), calcium chloride (746495), Trizma base (T1503) and maleic acid (M0375), were from Sigma-Aldrich Chemie GmbH (Steinheim, Germany). Soyasaponin I (S9951), protodioscin (G0299), catechin (43412) were from Sigma-Aldrich Chemie GmbH (Steinheim, Germany). Absolute ethanol (131086.1214) and n-butanol (131082.1611) were from Panreac-AppliChem (Spain), 95% n-hexane (6752-25) was from Macron (Poland).
