Lactobacillus Plantarum SWFU D16 was isolated from Yunnan goat milk cake, a Chinese traditional fermented food in our Laboratory. Lactobacillus Plantarum ATCC 8014, Lactobacillus Bulgaricus CICC 6045, Lactobacillus Casei ATCC 334, and Streptococcus Thermophilus CICC 6038 were purchased from the Guangdong Microbial Culture Collection Center (GDMCC), and Lactobacillus Rhamnosus ATCC 53013 was purchased from the American Type Culture Collection (ATCC).
Folin–Ciocalteu reagent, gallic acid, rutin, 2,2-diphenyl-1-picrylhydrazyl radical (DPPH), 2,2’-azinobis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS), 2,4,6-tri (2-pyridyl)-1,3,5-triazine (TPTZ), iron chloride (FeCl36H2O), p-Nitrophenol α-D-glycopyranoside (pNPG), acetylthiocholine iodide (ATCI), 5,5’-Dithiobis-(2-nitrobenzoic acid) (DTNB), and other chemicals were purchased from Aladdin (Shanghai, China). Chromatographic acetonitrile was purchased from Merck (Darmstadt, Germany). α-Glucosidase (G5003), and acetylcholinesterase (AChE, C3389) were purchased from Sigma-Aldrich (St. Louis, United States). Syringic acid, (+)-catechin, rosmarinic acid, chlorogenic acid, and other standards were purchased from Yuanye Bio-Technology (Shanghai, China).

Bioactive Compounds from Pecan Walnut Shells

Pecan walnut shells (Carya illinoinensis) were collected at 1,090 above sea level (coordinates 25º45'32''N, 102º58'58''W) in San Pedro, Coahuila located on the north of Mexico. The shells were ground in a Wiley mill (Arthur Thomas, Philadelphia, PA) equipped with a 2 mm screen. Aspergillus oryzae 22788 was acquired from the American Type Culture Collection (ATCC).
Potassium hydroxide, gallic acid (GA), Folin-Ciocalteau reagent, phosphate buffered saline tablets (PBS), fluorescein sodium salt, Trolox ® (6-hydroxy-2,5,7,8-tetramethylchroman-2-carbonsaeure), potassium peroxidisulfate, DPPH (1,1-Diphenyl-2-picrylhydrazyl (2,2-Diphenyl-1-picrylhydrazyl), catechin, vanillin, ABTS (2,2′-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid diammonium salt), trifluoroacetic acid, and the analytical standards: gallic and ellagic acids were acquired from Sigma-Aldrich Quimica S.A. (Madrid, Spain).
Pure and distilled water were obtained after filtration through a Millipore-Q system (Barcelona, Spain).
Acetonitrile were from VWR International, Radnor, PA, USA.

Evaluation of Antimicrobial Compounds Against S. mutans

Shikimic acid and gallic acid were commercially accessed from Sigma, Inc. S. mutans UA159 were obtained from the American Type Culture Collection (ATCC). The bacteria were cultured overnight in Brain Heart Infusion (BHI) broth (BD, Sparks, MD, USA) at 37°C for further experiments. BHIS (BHI broth containing 1% [wt/vol] sucrose) was used for biofilm assays. The negative control group was set as sterile phosphate-buffered solution (PBS) of the same volume as SA. The concentration of 0.2% (wt/vol) chlorhexidine was used as a positive control. The inhibition rates of planktonic cells or biofilm refer to the difference between the absorbance of the experimental group and the negative control group as a percentage of the absorbance of the negative control group.

All reagents were purchased from Sigma Aldrich (France): acetic acid, acetonitrile (ACN), cyclohexane (CYHA), dichloromethane (DCM), methanol (MeOH), Dulbecco's modified Eagle's medium (DMEM), dimethyl sulfoxide (DMSO), tamoxifen, Folin-Ciocalteu reagent (2 N), gallic acid, quercetin, catechin, HCl, KH2PO4, MTT, NaOH, sodium carbonate, 15-LOX, and AChE. Cell lines (OVCAR and IGROV) were purchased from American Type Culture Collection (USA).
