Enzymatic Profiling of Lactobacillus Strains

Enzymatic activities of Lactobacillus strains were evaluated by using the API ZYM galleries (BioMérieux, Itay) as described by the manufacturer. The results were graded from 0 to 5 by comparing the colour developed within 5 min with the API-ZYM colour reaction chart. The results were expressed in nanomoles of hydrolysed substrate, from the intensity of the reactions obtained, in the range 0 (no activity) to 5 (40 or more nanomoles liberated), following the manufacturer's instructions.

Rapid Enzymatic Profiling of Microbial Strains

The strains used in this study were assayed for their enzymatic activities using the Api-Zym galleries (BioMérieux, Montalieu-Vercieu, France) as described by the manufacturer. Rapid semiquantitative evaluation of 19 hydrolytic enzymes was carried out. The colour that developed in each enzymatic reaction was graded from (+) positive to (-) negative and (W) weakly positive by the API-ZYM colour reaction chart.
